The pretty route crosses the countryside south of the Haut-Pays, ending at Blaugies, a rural town far from any urban bustle. The brewery’s situation is not insignificant. In the heart of the prairies, it draws pure water, the
base of all good beer, added to the malt and barley from the local region. The Moneuse as the Spelt Wheat Season symbolises the terroir and character of the Haut-Pays, between sweetness and bitterness.

Modernity joins the expertise of a Champagne winemaker, Filip Remue. The domain, founded in 2015, is built in a field of wind turbines where vineyards of Chardonnay, Pinot Noir and Blanc grow at their feet. The bases benefit from the gentle breezes from their blades, which delays frosts. From this limestone soil and the ideal
hillside exposure comes a high quality production of Brut Blanc de Blancs and Brut Rosé.

The Ferme Fosselard opens the agricultural world to the general public thanks to educational activities that take place there. The farm’s production runs in a short circuit, only in the adjacent store. Milk, butter, ice like yoghurt comes from the farm’s placid cows. Strolling through the large barn, there emerges a peacefulness and real bond between Man and animal. Everything is smooth, just like these delicious yoghurts.
